Building Healthier Communities Through Food Literacy
About us
The Nutrition Clarity Foundation is a nonprofit organization dedicated to improving community health by connecting nutrition education, food literacy, and sustainable food access.
We believe prevention begins with awareness — and that every person deserves the knowledge to understand what’s on their plate and how it shapes their well-being.
Why We Exist
Most people were never taught how to read food — only how to restrict it.
Communities are struggling with preventable conditions, rising health costs, and limited access to real nutrition education.
We exist to change that.
The Nutrition Clarity Foundation helps families, schools, and organizations build awareness around how food choices affect energy, mood, and long-term health.
Because when people understand what’s in their food, they can take back control of their health — and their future.
Our Mission & Vision
Mission:
To improve community health by connecting nutrition education, food literacy, and sustainable food access to prevent chronic disease and support underserved populations.
Our Vision for Change:
We believe prevention begins with awareness — and that starts with food clarity.
Most people were never taught how to read food, only how to restrict it. Families are trying their best with limited access, limited guidance, and labels designed to confuse.
The Nutrition Clarity Foundation exists to change that — by making nutrition education simple, personal, and accessible for every community.
Our vision is a future where understanding what’s on the label becomes as common as knowing how to read — because when people see food clearly, they change their health stories for good.
Our Approach
The Clarity Framework connects what’s on the label to how people feel every day — turning nutrition into a skill of awareness, not perfection.
How It Works:
Ingredients → Body Chemistry → Deficiencies & Imbalances → Chronic Conditions → Daily Life Impact
This approach powers every program and partnership we create, helping people see food not as a set of rules, but as a tool for prevention and empowerment.
Our Programs
Community Health & Education
Workshops and digital programs that connect food literacy to real-life energy, mood, and health outcomes.
School & Family Initiatives
Resources that help families and educators build early habits of awareness — reading labels, understanding ingredients, and making confident choices together.
Workplace Partnerships
Collaborations that bring nutrition clarity and prevention awareness to employee wellness programs and organizational culture.
Research & Advocacy
We advance awareness around how nutrition literacy reduces chronic disease, healthcare costs, and inequities in access to prevention.
Our education programs are delivered through Nutrition Clarity Academy, our connected learning platform designed to make food literacy accessible, practical, and prevention-focused for individuals, families, and organizations.
About The Founder
Autumn Shelton founded the Nutrition Clarity Foundation after decades of personal and family experiences with chronic conditions that could have been prevented with better food education.
From her own journey with prediabetes and other chronic conditions beginning in childhood, to her father’s struggle with diabetes and high blood pressure, and her mother’s battle with Crohn’s disease — each story carried the same truth: people aren’t failing their health, they’re missing clarity.
Years of research into food systems and health disparities turned Autumn’s lived experience into purpose.
What began as personal research grew into a mission to make nutrition literacy a basic right — turning awareness into prevention for communities everywhere.
She built the Nutrition Clarity Foundation to bridge the gap between knowledge and access, helping individuals and families understand what’s on the label, how it affects their bodies, and how prevention truly begins with awareness.
